TJ’s Honey Banana Pancakes

Family Day Brunch reached a whole new level this year by making everything from scratch. Even the bacon! But for now we are just going to let you in on the honey pancake magic 🧙🏻‍♀️ 

TJ’s Honey Banana Pancakes were soft, fluffy and full of flavour. Part of the secret is cooking them in a cast iron frying pan, but if you don’t have one, that’s ok too! They will still be delicious. Now let’s get to how to make this delicious breakfast main!🥞 

TJ’s Honey Banana Pancakes

Ingredients:

Wet Ingredients

1 Duck Egg  (Chicken Egg will work too) 

1.5 Cup Milk

2 Tblspn Olive Oil

1/2 Tsp Vanilla

2 Tblspn Tamarack Jack’s Raw Honey

2 Bananas

Dry Ingredients

1.5 Cup Flour

1 Tblspn Baking Powder

1/2 Tsp Salt

1.5 Tsp Cinnamon (Optional)

Step One. 
Place the jar or bucket of honey into warm water to soften. Crack the egg into a large mixing bowl and whisk until frothy. Pour in the milk and whisk again. Add the vanilla and honey, whisk until blended. 

Step Two. 
In a separate bowl, mix the dry ingredients together and mix until blended. Add slowly to the wet ingredient mixture while whisking continually.

Step Three. 
Mash both bananas in a separate bowl and then mix into the pancake batter.

Step Four.
Place a cast iron skillet (or regular skillet) on medium heat. Use a soup ladle to scoop the pancake mixture into the skillet. Cook on one side until the batter bubbles pop (or it’s browned on the bottom). Flip and cook again until browned. 

Step 5. 
Serve immediately with chopped banana and TJ’s Honey Bourbon Syrup

Makes approximately 3 servings.
